    What are you drinking now?

    Applejack I started with 3 gallons of EdWort's apfelwein then ice distilled until it wouldn't freeze anymore, ended up with about a quart and change. Very smooth, very sweet, and will get you trashed at warp speed if you're not careful.

    Thanks for the input, at least I have a starting point and I know I'm not completely in left field thinking this might be a good idea. I'll see if I can find some IPA 395 and Saison de Buff and begin my "research" tonight.

    No the bad ones typically weren't carbed, after a while I got to the point where I'd open bottles and if it didn't go "fffpt" I just dumped it and got another.

    A few months ago I brewed up a sierra nevada pale ale clone (extract). My OG was within 2 or 3 points of where it should have been theoretically. I pitched my yeast and everything was working as it should have been. I was getting bubbles about 18 hours after pitching and was at high krausen...

    Under normal circumstances I'd say yes however any mellowing of the hops will be offset by stronger flavor and aroma that comes from "conditioning" clams and milk! :eek:

    I've been reading your posts for a month or so now and I figured I should quit lurking and be sociable. The volumes of information on here have been extremely helpful while brewing my first batch which I just bottled tonight (English mild brown). I'm hopelessly hooked. Thanks all! :mug:
