    Fermenting during the warmer months

Hi all: During the summer, my basement temperature is in the mid-to-high 70s. Unfortunately, I cannot make special arrangements to cool the fermentor so I have to deal with what I have. What ales ferment well in the aforementioned temperatures? I ran a search, but the only answer I...

Witbier Hoegaarden Witbier Clone - Pierre Celis White

First off, thank you for sharing this recipe. Secondly, I have not moved to all-grain yet; has anyone done a successful conversion of this recipe to partial extract? If not, any advice on such conversion?

    Bitterness Loss in Bottles

Thanks. Would suggest that in addition to the 2oz of Cascade at 60 minutes?

    Bitterness Loss in Bottles

Finally I am venturing outside of the beginner's subforum. My inattention to detail during cooking a batch produced a much better beer than I had hoped (https://www.homebrewtalk.com/f39/twice-hops-twice-yeast-apa-162954/). Friends, family, and I liked it so much that I decided that I will...

    Is this an infection?

Update: The anticipation was killing me so I opened one last night after five days in bottles and it is good. Carbonation was great, but obviously it tasted green. My wife also tried it and thought that it was good. I will probably open another in a week to see if anything has changed.

    Is this an infection?

Well, I cleaned it five times with OxyClean and sanitized with a double dose of Star San. Pitched the yeast last night and I'm pretty excited about it. :rockin:

    Is this an infection?

Thanks. I should have mentioned that the floating matter is not as white as the they appear in the photo. In retrospect, I'm not quite sure what I did wrong. The only thing that came in contact with the wort after boil was the thermometer and a spoon that I used to stir for oxygenation. They...

    Is this an infection?

It's a Mr. Beer fermenter. The opening is about 3" in diameter. It tasted just green to me and apple-y and sour, but not horrible by any means. Three weeks in the primary and three weeks in bottles. I was actually thinking of a Better Bottle. Two-gallon batches are getting old...

    Is this an infection?

Yes, all, it's the obligatory is-this-an-infection thread. The batch you see in the picture was fermented on top of old trub for three weeks. Previous batch turned out great. Before bottling I gave a shotglass to my wife to try (before I tried it) and she almost threw up. She thought it...

Twice the hops and twice the yeast in an APA

The one I had last night was actually less bitter. Here's a photo of it:

Twice the hops and twice the yeast in an APA

Thanks. So, you don't have to sort through the entire thread for the numbers, here's a condensed version: Cascade hops, 7.8% AA: 2oz @60, .5oz @ 10, 1oz steep during chilling. O.G.: 1.055 Batch: 2 gallons If you need more info, please see the recipe in one of my previous posts. Thanks...

Twice the hops and twice the yeast in an APA

Another update: The beer turned out very good, but it a pretty bitter aftertaste. It's not nasty by any means, but I would not prefer it that bitter. Based on the online calculators, I keep coming up with 150-190 IBUs. It is noticeably more bitter than an Arrogant Bastard Ale, but not...

Does bottle-conditioning continue in the refrigerator?

A friend says that his beer tastes good, but leaves an dry, dusty-like aftertaste; like an old soda. He has already put all the bottles in the refrigerator. Will they continue to condition there? Will the off-flavors balance out? Will it hurt if he pulls them out back to room temp for a...

    Simple first brew..

Read at least Section 1 from Palmer's How to Brew. That said, if you like APAs, they are pretty simple to make. Also, pay a visit to your local homebrew supplier, look at their kits and recipes, and ask questions.

Twice the hops and twice the yeast in an APA

Update: I bottled two nights ago. The aroma was very good and so was the taste. I can't wait for this batch to carbonate!
