Bad efficiency with Kolsch--Global Kolsch issue?

I don't think the potential of Global Malt Kolsch was the issue. I brewed a Kolsch a couple months ago using this from BMW as a base malt - 7 lbs along with 2.5 lbs wheat - and put Pilsner into BeerSmith just as you did, single infusion, double batch sparge (equal volumes), no mash out. I...

    Sweet tasting/ fruity esters

A lot of people mention an extract 'twang' which, to me, tastes almost like a molasses-y sweetness. I'm not sure how to fix that, aside from going all-grain, but the esters may be addressed by holding proper fermentation temperatures and making starters. My beer got a LOT better when I started...

    Kolsch yeast in pepper beer?

I have a Kolsch with WLP029 finishing up now, and next brew on deck is a pepper beer using EdWort's Haus Pale as a base. Do any of you more experienced folks see a problem using some slurry from the Kolsch to ferment the pepper beer at 65F? I figure it's a clean enough yeast to let the peppers...

2 months in, tastes like soap. Salvage?

I may be way off base here, but... When I first branched out from BMC into drinking 'specialty beers' a few years ago, I drank a Sierra Nevada Pale Ale, which (at that time) I thought tasted like hair shampoo. That taste was the citrusy/floral Cascade hops to my virgin palate - something that I...

    Hydrometer Reading

After it's been fermenting for a couple weeks, probably longer for cider, check the gravity. Then check again a couple days later, if no change then it's ready. My batch of cider took around 5 weeks to fully ferment.

1 or 2 packs of dry yeast?

1 package of dry yeast for that OG is plenty... 2 is overkill. There's some debate on the effects of overpitching (search: overpitching).

    Arrogant Bastard clone AHS???

I ordered your mozz kit and made my first batch a few days ago - came out great but I did have to triple up on the salt. Currently thinking about ordering your Double Bastard clone to pitch on top of a Pacman cake I have currently going w/ a 1.069 OG brew - would this be ok or might the yeast...

Where can I get a decent beer in New Orleans?

Check out the Avenue Pub on St. Charles... get off the streetcar on the Polymnia stop. I was there last weekend and had my fill of Racer 5 on draft, and they had a great selection of other styles as well. The bartenders are friendly, and explained that each draft travels less than a foot to...

This is outstanding news for beer-deprived Alabamians! Anybody have info on beer stores in the Mobile area?

    Homebrewing Legality by State

Alabama = no What's more, no beer greater than 6% ABV may be sold in AL. And if that weren't enough, beer cannot be sold (retail) in containers greater than 16 ounces (so no 22's or growlers!). All this despite the fact that you can purchase 80-proof or stronger spirits if you so desire...

Yet another Munton's post - disappointed

Thanks for the comments and great advice. So here's how it went down tonight: "Ms. Munton's Beer, meet Mr. Danstar Nottingham. I'm going to leave you two to get acquainted. When I come back in a week, I want to see lots of little baby Nottinghams. Oh, and, Ms. Munton's, try and lose a...

Yet another Munton's post - disappointed

I see I'm not the first with this problem. Thanks for the replies, I'll stick with it and hope it comes out (and to avoid the wrath of Revvy!)

Yet another Munton's post - disappointed

So I brewed up my first beer - a Munton's extract kit, the IPA. Followed the instructions, modified by what I read on HBT forums. OG was 1.052, exactly what the kit specifies. Racked over to secondary at 10 days, 1.021. Now, twelve days after that, SG is still 1.021 and the taste I stole...
