    Same here. Usually I get close to 80% with US-05. Nottingham in low 70%.

    Strange, because I never had very good attenuation with this east. Good flavor profile. Yes. Flocculation and quick to start - sure. But not very good attenuation, usually in the range of 70%. For higher attenuation US-05 is the one to go. Is it me only or anybody else sees this trend?

    Besides of color and taste by adding more of a light colored crystal you increase amount of non fermentable sugars hence impacting FG and body of your beer.

    I had a chance to use both. S-23 gives a bit of fruity notes indeed. Used it twice. Pitched 2 packs per 5 gallons and fermented it around 50F. One was helles, the other was german pilsner. In helles fruitinnes is (still drinking it) obvious but not overhelming and there are no much hops to hide...

    I don't think you can do this recipe with extract only. But for PM book suggests using 5.25 lb of Mutons Extra Light DME plus 3.5 lb Light LME instead of Pilsner base malt.
