    I would for sure dry hop with the 2.15 oz of Amarillo like they do. Makes the hop character IMO. My batch is sitting on them now and tastes pretty on par.

    Obviously you guys are adding your own mineral content? Drink RO at the house but thought that it lacked the mineral content desired for yeast?

    Just fiddle around on hopville or beersmith and find the appropriate level of pale malt for the ABV you want. Add 3/4 oz of cascade at 60, 45, and 5. Dry hop with a 1/2 oz.

    Pale malt + cascade. That safale or appropriate wyeast will work.
