That is very interesting. I would have expected the aroma graph to start higher even at time zero because dry hopping or throwing hops in at shut off adds aroma. I guess this assumes there is no additional contact time other than the boiling.

It also might apply more to whole hops than pellets. The mechanical agitation of the boil helps to release hop character in hop cones, so a small amount might be necessary. But perhaps if you whirlpool your wort, this might not matter.
