What do you think about this Stout I plan to make?


Pilsner Malt Cargill 8,816 lb
Munich Malt Weyrmann 4,408 lb
Chocolate Malt Cargill 1,102 lb
Caraaroma 1,102 lb

Galena Hops 1,05 oz. at Boil (for 60 minutes)
Cacao 8,75 oz (20 mins before flame-out)
Sugar 2,204 lb (20 mins before flame-out)
Irish Moss 0,07 oz. (15 mins before flame out)

Yeast: Safale S-04

I expect an OG of 1.079 :rockin:

after fermentation:

Fresh Spearmint leaves 0,175 oz. on secondary for 5 days
Cinnamon 0,175 oz. on secondary for 5 days
 
It sounds interesting but I didn't chime in because I have no frame of reference for anything like that. I say go for it.
 
thanks. Any thought on the hops im using? would they be to astringent for this kind of "sweeter" beer. Is my OG to high maybe. These are the things im preocupied.

Assuming you are going for a dry stout, I think the cocoa will add some bitterness so take that into account when you are thinking about your hop selection. Looks good though.
