Hi Team!
I am new or let’s say it’s been a few years since my last cider. Done plenty of beers in the meantime…
I think i mucked up big time, got given a heap of peaches so had the idea for a apple golden peach cider. 30l apple juice and 15kg peaches pureed raw and pasteurised on 68c. Unfortunately i wasn’t using a strainer or hop bag. Fermenting with Nottingham yeast, No issues with the ferment in pressure fermenter. So now 8 weeks in, nothing seems to settle, everything looks like a fruit smoothie. Haven’t tried proper cold crashing. Any ideas how I could fix this, would really suck to waste it as flavour is great but it’s sooo thick.

I would try pectinase and cold crashing if possible. Pectinase works better if added prior to fermentation, but I’ve had success post fermentation as well.
