I have been toying with the idea of using a spray-on ceramic insulation on kettles or other brew gear. I'd do the walls and the lid but leave the bottom exposed. I currently use electric but I'd leave optionality open. Layering insulation can be quite a pain so the idea of convenience and permanence appeals to me.

Is this something has ever done?

I put insulation on a metal mash tun that was 1" rockwool insulation wrapped in sheet aluminum. The exposed insulation on the top and bottom was covered in RTV silicone. I made it to be removable if necessary but I never did. I do think that wrapping a vessel with 1" of closed cell foam with some velcro closures is easy enough.

Fitting the aluminum sheet and compressing it so I can rivet on the draw latches.

Rockwool isn't super flexible, but it will conform with some persuasion.

RTV silicone filling the gap, about 1/8" thick...
