I put together this recipe over the last week and will be brewing this with my cousin next weekend. He has never brewed and wants to see how the process works, plus he is paying for the ingredients so heck ya. He is a big fan if citra hops and IPA's so I put the recipe together and I think it should be pretty solid. Just looking for any imput before i brew it.

I think it sounds good? I'm brewing something kinda similar (hop-wise) soon, I would think they would go together well. Here's what I am doing:

HOME BREW RECIPE:
Title: Vienna SMaDH

Brew Method: All Grain
Style Name: American Pale Ale
Boil Time: 60 min
Batch Size: 6.25 gallons (fermentor volume)
Boil Size: 8 gallons

Final Gravity: 1.011
ABV (standard): 4.24%
IBU (tinseth): 40.45
SRM (morey): 5.69

FERMENTABLES:
11 lb - American - Vienna (100%)

HOPS:
0.5 oz - Cascade, Type: Pellet, AA: 7, Use: Boil for 60 min, IBU: 12.32
0.5 oz - Cascade, Type: Pellet, AA: 7, Use: Boil for 30 min, IBU: 9.47
0.5 oz - Citra, Type: Pellet, AA: 11, Use: Boil for 20 min, IBU: 11.73

1.5 oz - Citra, Type: Pellet, AA: 11, Use: Dry Hop for 5 days

MASH GUIDELINES:
1) Temperature, Temp: 147 F, Time: 60 min, Amount: 4.7 gal, strike at 159
2) Sparge, Temp: 185 F, Time: 10 min, Amount: 4.7 gal, adjust volume as necessary
Starting Mash Thickness: 1.5 qt/lb

It looks good to me, except you might be a little light on late hops (at least for my taste). I might increase the 5 min and flameout additions a bit. But it looks like a pretty solid recipe. I like those hops together.

Huge fan of Citra and your recipe looks very much like a recipe I would make. I have 2 recommendations. The first has to do with Citra being a very dominating hop. I LOVE Citra, but it will overtake the Cascade, IMO. For the boil additions, I'd cut the Citra back just a bit (maybe 1/2 - 3/4oz) and up the Cascade a bit (1.25 - 1.5oz). And for the dry hop, I'd swap the two amounts (2oz for Cascade and 1oz for Citra).

Second, I prefer my APA and IPA beers more on the dry side. I'd recommend a cooler mash. Maybe 148-150F range. Your estimated FG is 1.016. I would like mine to finish closer to 1.010. But again, I like my hoppy beers to be drier and less malty.

Really though, the recipe looks pretty solid. It's scary how similar it is to a lot of my APA/IPA recipes in terms of a simple grain bill, bittering with magnum, and your hop schedule.

:mug:

I would increase the dry hop from 3 oz to more like 5 or 6 oz. I typically dry hop my hop-bursted, 5 gallon big IPAs with 2.5oz of hops. 3 oz for a 10 gallon batch seems a little low.

+1! I kept thinking of this as a 5gal batch... at least the hop additions.
I'd up the 3 Cascade boil additions to 1.5 or 2oz. Then up the Citra dryhop to 2oz and the Cascade to 4oz.

I think you are right with the hop additions. I'm used to writing five gallon recipies and did under shoot on the hops. Guess I should have written it as a five and scaled it up. I may drop the mash temp a little. I don't want it too dry but it might end up too sweet at that temp. Thank you for the input.

I guess citra is a pretty dominating hop. I want the citra to be the star of the show, but not over the top. Ill have to play around with it some more tonight. I like how those two hops blend together . I did a pale ale a while back with those two that I loved. It definately had a lot of citra on the nose.

I did an all Citra pale ale that turned out fantastic! Was very, very happy with it. One of the best compliments I ever received was at a home brew club meeting. A fellow member tried my Citra Pale Ale and said "Wow.... I could drink this all day!".

I do have a recipe in the works though for a Citra/Cascade Pale Ale. Very similar to your recipe, but slightly scaled back for a Pale Ale instead of an IPA.

For my own tastes, I'd cut the crystal a bit. With over 7% crystal and almost 4% cars-pils, I'd expect this to come out a bit sweeter than I like. I'd also drop the mash temp to 152.

Those are all personal taste moves, though. If you want something with a bit more residual sweetness, go for it.

On the hops, I love the combination! I'd switch the balance, though, between your bittering and late additions for IBU contribution. In other words: you're getting 2/3rd's of your IBU's from the 60 min Magnum addition and 1/3rd from Citra/Cascade. I'd do it the other way around.

Definitely think about going heavier on the dry hop. I use 3 oz of Citra per 6 gal carboy and think I could still stand to go heavier :)

If got the clone recipe for zombie dust, an all citra ipa. Iv been afraid to try it thinking that all citra would be too much. Maybe ill have to give it a run. If never had the real zombie dust.

I've brewed that recipe 4-5 times now. It's absolutely the best beer I've ever made. My friends & neighbors beg me to make more every time I run out. I'm damned confident you'll be happy if you go that route.

Altering the hops schedule of that to add Cascade, and or sub Magnum for bittering, would yield a similarly stellar beer, I'd bet.

FWIW, that beer also lands at the upper edge of what I like for sweetness, but damn is it good.

Ill have to keep that in mind if I don't get a chance to finish this recipe. All I know is something is getting brewed this weekend. Its been a couple months and its driving me crazy. Ha,ha

I know the feeling. I brew outdoors, and here outside of Detroit, that hasn't been an option in what feels like forever. Sunday is the day! I already have permission from SWMBO :D

Recipe looks good. The only change I would make is to add 2 pounds of sugar late in the boil to dry it out so that it is more like a West coast IPA. I really like the hops to outshine the malt in my IPA's so I like to make them as dry as possible(1.008 - 1.011).
