5 gallon boil topped off to 5.5 gallons
3lb DME extra light 60 min
7lb LME extra light 15 min
2lb honey 15 min

.5oz Cascade 60
.5oz Cascade 30
1oz Cascade 15

yeast nutrient, Whirlfloc 10min.

had a pack of Wyeast Belgian strong ale 1338 that was a few months old so
I pitched that with Wyeast Trappist 3787

aerated for 15min with an airstone
pitched at 70*

projected numbers
OG 1.085 actual OG 1.090
FG 1.020
IBU 37.93
SRM 4.67
ABV 8.51%

had airlock activity before I was done cleaning up. Never had fermentation begin so quickly..

Any critique or ideas on what I could have done better is greatly appreciated.
