Hey all,
Long time lurker, first time caller.

And this thread is a doozy. Bark at me if I should make separate threads or use brewing software to get all the necessary calculations.

I bought a few of those luckyred all-grain kits from valuebrew with the intention of tweaking them. I haven't strayed much from the kit, but these are my ideas. Please to critic!

And I apologize for the nooby lack of details. All are 5gal.

Kit Includes:

9 lbs. Premium 2 - Row
12 oz. Caramel 40L
2 oz. CaraAroma
2 oz. Roasted Barley
(pre mixed Bag)

Hops:
1 oz. Cascade
1 oz. Fuggles

I have the following hops (includes the ones listed above):
3 oz cascade (?AA)
3 oz fuggles (?AA)
2.5 oz EKG (7.2%AA)
2 oz polaris (21.2%AA)
2 oz falconers flight (10.8%AA)

Idea #1)

RED STEAM GO/Sabertooth Steam Ale
- polaris hop sub in for Northern Brewer
- mash @152 for 1 hr
- 0.5 polaris(21.2%AA)oz FWH (90min)
- 0.5oz(21.2%AA) (15min)
- 0.5oz(21.2%AA) (1min)
- hopefully recover a harvested octoberfest lager yeast (WL820) that smells iffy (as lager yeast is wont to do) or get new Cali Lager yeast

Idea #2)
OMEGA RED IIPA
- mash @152
- 1 lb. amber DME
- 1 lb. turbinado sugar
- 0.5oz polaris(21.2%AA) FWH
- 2.0oz Cascade(?AA) and
- 1.0oz FF(10.2%AA) staggered additions at 20/10/5/1 min
- 1oz FF + 1oz cascade in dry hop
- pitch onto washed yeast from cider graf (white labs belgian 550)

Idea #3)
WEAPON X HOP-STOUT
- [not sure what grains to add- black patent? chocolate? carafa?]
- mash @158
- 1 oz Fuggles (?AA) FWH
- 0.75oz EKG (7.2%AA) @20 min
- 0.5 oz Fuggles @10 min
- 0.75 oz EKG @5 min
- 0.5 oz Fuggles @ flameout
- 1.0 oz Fuggles in dry hop
- pitch white labs Irish Ale 004 washed from oatmeal stout.

Idea #4)
parti-gyle;
combine 2 kits to make a grist of:

18 lbs. Premium 2 - Row
1.5 lbs. Caramel 40L
4 oz. CaraAroma
4 oz. Roasted Barley

first runnings make a few gal. of BBBW (Big Belgian Barleywine) on some harvested Maudite yeast.

second runnings make the sabretooth steam (idea #1)

any feedback would be great. i know hops and roast don't always play well together, but i like hoppy stouts and black IPAs (they're different!) and i like the idea of modding a kit as a transition to generating a recipe. I should have boughten more hops.
