I'm looking for a relatively simple American IPA recipe. I've been making a lot of west-coast, fruity, citrusy IPAs but I would like to try something different.

Thinking IBU around 60, OG around 1.065.

Grains, I'm thinking a mix of 2-row, munich light, crystal 20L, and flaked wheat (for foam)

Here is roughly my current hop collection:

Variety - Amount(oz) - AA%
Azacca 2 8.3
Buzz Bullets 2 9.7
Cascade 9 5.5
Centennial 8 8.5
Chinook 8 11
Citra 0.5 14.1
Columbus 8 8.9
Comet 2 8.9
El Dorado 2 9
Equinox 2 14.6
Hallertau Blanc 2 7.7
Jarrylo 2 14.1
Lemon Drop 2 5.1
Magnum 0 13.2
Mandarina Bavaria 2 6.8
Mosaic 4 12.3
Pekko 2 15.6
Simcoe 1 12.9
Warrior 2 14.3
Zythos 2 9.1

Thanks!

Bitter:
Columbus (or Warrior) 1oz @ 60

Whirlpool:
Mosaic 2oz @ 170 degrees
El Dorado 2oz @ 170 degrees
Mandarina Bavaria 2oz @ 170 degrees

Dry Hop:
Citra .5 for 5 days
Mosaic 2oz for 5 days
Azacca 2oz for 5 days
Lemon Drop 2oz for 5 days

Started doing this kind of arrangement lately for experimental batches and it has produced some amazing stuff
Boil:
Warrior - .75 oz @ 60
Columbus .5 oz @ 20
Centennial .5 oz at 10
Mosaic 1 oz @ 5
El Dorado 1 oz @5
Chinook 1 oz @ 2

Immediately chill to WP temps

Whirlpool 40 min at 170°F
.5 oz citra, 1 oz chinook, 2 oz mosaic, 1 oz El Dorado

Dry hop 5 days
2 oz Zythos. 2 oz centennial, 1 oz mosaic, 1 oz chinook

Will not call out IBU's from whirlpool, but by recent hop use ,this should get you into the mid 50's anyway regarding boil (eyeballing based on alphas and 5.75 gallon batch

When you mention that you want something different from fruity and citrusy, what are you going for? You could go for a pine, resine type profile with Simcoe, Comet and Chinook. Or you could go more delicate and floral (maybe aim at APA ~1.055) with Cascade and Mandarina Bavaria. Hallertau Blanc also has a very interesting profile.
