Hi All!
I am a biologist who used to homebrew, before all the great microbreweries in the world sort of made it not worth the effort. Recently, my neighbor sold her house and its been abandoned ever since, along with 2 prolific apple trees in her back yard. After watching all the apples fall off the tree and rot last year, I decided this year to raid the yard and plunder the trees and make some cider. I stumbled onto this forum looking for info on pectin and sulfites and, and happy to be here!
