We have two great options for meads:
1. Bray's One Month Mead (BOMM) protocol
2. TOSNA protocol for dry wine yeast, combined with degassing and aeration til the 1/3 break

Welcome from Lebanon, OH. If you haven't found it already, Listermann is in Cincinnati and has a great home brew store. They brew beer on premesis as well! The people there are a great resource and they'll probably tell you the local Homebrew club is the Bloatarian Brewing League (BBL).
