I had some homemade wine, and some goat's milk, so I made this cheese. I just cut it (a little early :) )

It's exactly 1 month old. It's a washed curd cheese that is soaked in red wine. That means that the curds are washed with water, replacing the whey, to make a lighter cheese. Then into the wine.

I have this really good cabernet that I made myself, so I sacrificed a bottle.

Flavor? Surprisingly, it tastes like the wine! Very interesting. The cheese itself is not too strong, so the wine flavor is evident. Great on crackers!
It's a little cragly on the surface, but inside the cheese is awesome.
