I’ve used plastic buckets. They’re fine. Never noticed any taste difference. I prefer stainless because it holds up better, doesn’t contribute to micro plastics in the brew, and it is easier to clean.
 
I brewed in plastic buckets for over 20 years with no problems. I bought new ones every few years and use the old ones for grain storage, equipment storage, star San etc. Only moved to stainless because I had some disposable income during the pandemic. Beer tastes just as good.

FWIW, you don’t need a bunch of shiny crap to brew great beer.
