I have a pilsner recipe on deck for a future brew day. I have plugged my water info into Bru'n water and have a question about my Mashing Water Profile estimates. I am diluting my well water with RO water and adding 0.15 gm/gal. CaCl2 and 0.53 mL/gal 88% lactic acid to get these results: (ppm)
Adjusted: ~ Desired:
Ca: 29 ~ 20
Mg: 3 ~ 0
Na: 11 ~ 8
Sulfate: 8 ~ 15
Cl: 32 ~ 35
Bicarbonate: -35 ~ 0
Estimated mash pH: 5.34
Is the negative Bicarbonate value anything to be concerned about with all other values being close to the desired level?
I am doing full volume BIAB no sparge.
The recipe is:
9 lbs Pilsner malt
4 oz. Dextrine malt
4 oz. Crystal 10
2 oz. Sazz (2.8% AA) 60 min
1.5 oz. Sazz (2.8% AA) 15 min
.5 oz. Sazz (2.8% AA) 1 min
