I brewed a Kolsch back on 5/13/06 I let it stay in the primary @ 70F for the first week then transfered to a secondary and it is still at 70F. I started to read about Kolsh and found that people cold condition it @ 45F for 8 weeks. I used german/kolsch yeast wlp029 should I drop the temp to 45F and leave it for 8 weeks?

If you can, "lager" it cold, but try to lower the temp gently. I think it can only benefit for being cold conditioned for a while.

How does it taste so far? 70 is pretty high for a Koelsch style beer. Usually they are fermented in the lower 60s.

i would cold condition it any way possible for at least 2 weeks in the secondary, and then give it another cold condition after carbonation if you want.

The heat in my garage may prevent me from lowering the temp slowly since I have it in the fridge side. I am going to have to put it in the freezer side to lager.
I have not tasted it yet.
