I am wanting to brew a beer like the Grapefruit Hefeweizen at Epcot. My wife really likes it. I think from what I have read it is actually half hefeweizen and half grapefruit soda. My question is could I brew a hefeweizen and then mix the beer / soda in the bottling bucket. Then bottle condition as normal (except without priming sugar)? Then again this may be totally the wrong approach.
 
Probably not a good plan. Soda probably has preservatives in it which would inhibit fermentation.

Brooklyn Brew Shop sells a one gallon grapefruit honey ale kit. You might brew it up and see how it compares. If it works then just step up to a larger brew.

Adding soda to the fermenter just doesn't sound like a good idea.

I agree on staying away from any commercial soda.

Perhaps make a simple syrup with either grapefruit zest or juice?
