I want to add a sweet grapefruit syrup to a Citra wheat and I want the finished product to stay that way. Can I stop the fermentation like you would with wine before adding the syrup since I will be force carbing?

You need something to prevent fermentation from restarting.

For wine, once the wine is clear it is racked into a solution of k-meta and potassium sorbate.

Sorbate inhibits yeast reproduction, and it works better in the presence of sulfites so that is why sulfite is added.

For this to work, the liquid should be free of much of the suspended yeast.

But, if you keep the keg cold, it should really inhibit the yeast whether sorbate is added or not.

I've done the sorbate route but like yooper said. Just having the keg cold does the trick. If you use sorbate I would recommend cold crashing first then rack onto a tablespoon of sorbate that has been diluted in water. Then let it sit for a few days to a week then add the juice and carb.
