Sometimes the info that you get via written kit instructions or at the brew store counter can be outdated, not specific to the style, or just plain wrong.

There exist plenty of posts around here from newer brewers who have racked porters and stouts out of a primary (after just one week regardless of gravity) into a secondary not having any idea as to why they should do that except that the kit instructions told them to.
