this is the northern brewer kit and will be racking to secondary on 4 oz cacoa nibs in 1 week. n.b. says to just dump nibs into carboy and rack on top. is there a risk of infection? i typcially don't do secondary.
I have this one on tap now. I put the nibs directly into the carboy with no issues. On a side note this will give just a hint of aroma and flavor. I added 4 ounces of liquid flavoring into the keg after a couple of weeks to boost the chocolate presence. Next time I brew this I will double the nibs to 8 ounces. YMMV.
