I am new to the world of home brewing. I have completed my first batch (a wheat from a kit). I enjoyed brewing from a kit, but want to branch out on my own for my second brew. I love super hoppy, citrusy IPA/IIPAs, and have, after much research, developed the following recipe (which is largely taken from a recipe that I found on BYO with additions of some hops from some of my favorite commercial beers). Let me know any critiques/criticisms.

Thanks for your help. Here is the recipe (for a 5 gallon batch):

Extracts/Grains

6 lbs Pale LME
3.5 lbs Light DME
.75 lbs crystal malt (80L)
.50 lbs carapils malt

Hops

1 oz Nugget (12.5%) (60 mins)
1 oz Simcoe (12.7%) (60 mins)

.5 oz Amarillo (8.2%) (30 mins)
.5 oz Centennial (10%) (30 mins)
.5 oz Columbus (11%) (30 mins)

1.0 oz Amarillo (8.2%) (flameout)
1.0 oz Centennial (10%) (flameout)
1.0 oz Citra (11.1%) (flameout)

1.0 oz Amarillo (8.2%) (dry hop)
1.0 oz Centennial (10%) (dry hop)
1.0 oz Citra (11.1%) (dry hop)

Additions

1/2 tsp. Irish Moss (15 mins)

Yeast

White Labs WLP001 (California Ale)

I am shooting for:

OG = 1.076
FG = 1.019
ABV = 7.4%

I like the basic layout. You might look at this thread that goes over some similar issues for your recipe:

I'd think of adding some sugar to lighten the body some. Also, Columbus & Simcoe are fabulous hops that seem a bit wasted putting them only in the 60 & 30 minute additions, but that's it, I think.

If I add sugar, at what point do I add (i.e., do I add it with LME and DME after steeping or at some other point) and do I need to adjust the amount of DME or LME that I use?

I have recalculated my numbers, they are as follows:

OG = 1.083
FG = 1.020
SRM = 11
IBU = 82.3
ABV = 8.4%

If you want to make it a IIPA instead of a regular IPA, I would just add a pound of sugar on top of everything else -- should get you an extra 1+%abv and close to a 1.085 SG which is more typical for a IIPA. Add it at the end of your boil (last 5 minutes or so would be fine). For the hops, personally, I really like Columbus hops, so I like that you've put some of them into the later additions. Should be good!

Maybe move those 30 min additions to 20. That's going to be really bitter and you should get a bit more flavor at 20.

I would drop the carapils. You want the beer to attenuate as much as possible.

Add the sugar near the end of the boil and make sure it doesn't scorch.

Also, why don't use just use all Light ME and bump your crystal up a bit?

looks good to me. very similar hop varietals to my IPA recipe and I enjoy the same citrus and floral notes in an IPA/IIPA that you have described. I just tasted my hydro sample for the one I had in the tank. cant wait to consume in a month.

this was my recipe:

12 lbs American Two-Row
.5 lbs Crystal 60
Mashed at 152 for 1 hour

0.5 oz Amarillo 7.5% AA (FWH)
0.5 oz Centennial 9.9% AA (FWH)
0.5 oz Citra 11.1% AA (FWH)
1.0 oz Simcoe 12.2% AA (60 min)
0.5 oz Centennial 9.9% AA (5 min)
0.5 oz Citra 11.1% AA (5 min)
0.5 oz Simcoe 12.2% AA (5 min)
0.5 oz Simcoe 12.2% AA (dry hop 7 days)
0.5 oz Amarillo 7.5% AA (dry hop 7 days)
1.0 oz Citra 11.1% AA (dry hop 7 days)

OG = 1.063
FG = 1.005
ABV = 7.9%
IBU = 77

I was actually trying to keep mine in the IPA guidelines instead of IIPA due to the OG but it fermented so low that it is now more of a IIPA and the 77 IBU fits perfectly.

i have no experience with Nugget, does that attribute citrus and floral notes to the flavor?
