So I took a trip to Germany that pretty much was organized around beer. I spent three days in Bamberg, home to true rauchbier and was astounded. I spent one day walking to every brewery in town (its the densest population of breweries per capita in the world!) Apparently they are using Alderwood for smoking, anybody successfully done this at home?

I worked in Bamberg for 5 years...'99-'04...;)

In 2002 it celebrated the fact that 1000 years ago it was the capital of the Holy Roman Empire under Heinrich II (Henry) from 1002-1024!

Plus the Dom (catherdral) has the grave of the only Pope buried north of the Alps.
 
Ah yes it was probably my favorite stop, its like a step back in time. When I saw them pouring my beer from a traditionally tapped barrel, i knew i was in for something special. I'm jealous you got to spend so much time there, were you at the base?
