Need some advice. Found this recipe for a Franz Clone. Like the recipe, but was wanting an opinion on what problems would arise if I left out the Spalter and Pearle and used orange peel to get somewhat of a taste and aroma.

Recipe: Franziskaner Clone
Brewer: ACC
Asst Brewer: D Rock
Style: Weizen/Weissbier
Type: Extract with Grains

12.00 gm (0.42 oz) Hallertauer Hersbrucker [2.70 %] (60 min) 10.7 IBU
10.00 gm (0.35 oz) Spalter [2.00 %] (15 min) 1.8 IBU
4.00 gm (0.14 oz) Pearle [8.20 %] (15 min) 2.9 IBU
1 Pkg Bavarian Wheat Yeast (Wyeast Labs #3638 )

Note this recipe is for a 3 gallon batch only. Will need changing.

I think you would be fine doing that! Go For It!
 
Everywhere I've looked they want it in a ballpark of 70 degrees to get that clove and banana esters or taste. Somebody correct me if I'm wrong
 
I got another question. If I was going to do a partial mash with this one, how much grain would I need to equal 3 lbs of extract. I guess I would use wheat and some kind of pils.
