Does anyone know the official height of a bar top? From floor to bar, what should it be approximately?

One thing to remember is that the height isn't the biggest concern, it's the distance between the top of the stool seat (or arms if they have them) and the bottom of the bar. If you have a lip, that can be a big difference.
I like toots idea - start with the chairs. They're the most important thing and they can get pretty expensive.

Definetely easier to slope the floor. Thought would have to be given to the % size of people. i.e. if only one giant and rest midgets then slow slope down and a sharp drop at the end.
