If I only need half of the lme to make a batch, can I save the the other half of the lme for later. How long would it last in the fridge? Should I freeze it?

Good question... I have mine in a bin with my grains in the basement.

Edit: Thought you wrote DME...

Store the leftover LME in the fridge, cover well and try not to leave air head in the can (use a film). Use open LME can within a couple of weeks.

If it comes in one of those jugs (like the kind milk comes in) squeeze out all the air just until the extract reaches the rim, then cap it.

Thanks for the help. So about a month is the best I should expect lme in the "milk jugs" to last?

Maybe longer! One of the issues could be with mold formation. I suggest adding a bit of vodka to the container, just to cover the LME. Then stick it in the fridge. That will really discourage mold growth and help keep it fresh. Then it might last quite a bit longer.
