I just popped a couple of bottles of MY version of JAOM + stark raven mead+ burnt bouchet. It is a keeper.
Wont bore with details about the honey boil, read Stark Ravens account. It is super in depth. Used clover honey and burnt to basically black. Added water cooled and pitched ingredients ( well, sort of) according to JAOM. I made a few adjustments though. I zest ed the orange after a thorough but gentle hand cleansing. The pith is quite bitter when used in cooking so i figured it would be the same here. Then i also used Safale 05, an ale yeast along with nutrient and energizer.
Took forever to ferment but it was worth the wait. Once it finished fermenting it dropped clear very quickly.
I bottled and about 4 months later, WOW!! Awesome. Just sharing one of my successes.
