Wont' be brewing until Sunday and I just picked 6 gallons of a pretty spicy varietal. I was planning on making a tea and really boiling it down. Putting the liquid in Ice Cube trays. I know a local brewery that makes a hop tea and adds it to their Pale Ale to make a really interesting IPA.
Should I hold out 7 days on FRESH picked hops?
