I have only brewed a few 5 gal all grain batches but I want to convert a 5 gal recipe to 10 gallons. Do I just double everything, including hops and grain?

Yes, double all ingredients. That is all. You don't need to double mash times, boil times, etc. That's cool you want to step it up a bit.

Don't forget the yeast though.
