I had my brew day 9 days ago. I pitched the yeast at 60 degrees and ramped fermentation up to 74 degrees within 24 hours. After 3 days the beer was done.....1.009 final gravity. Wyeast 1187 is a beast of a yeast and leaves such a great malty background with fruity esthers that I believe it is the ultimate quick turn around IPA yeast. I kegged the beer after 8 days and had my first glass on day 9. Its such an amazing fresh and clean IPA flavor that you just cant buy. Dry hop from day 3 to racking on day 8 at 74 degrees.
Yep....9 days grain to glass on an IPA. Scale this recipe as you see fit...its amazing. I would sub cascade for the legacy if you have it.
