What thermometer do you use to measure the temps in the BIAB kettle/MLT? Also, where do you put the probe? I recently compared my thermometers and got a difference of 11 degrees between them.

Thermapen! I'll never use anything else!

I bought a thermapen about 5 years ago for cooking on a recommendation by some cooking show on TV.

I don't do anything without it now. It is by far the fastest most accurate digital thermometer I've ever used.

Hell I've even actually dunked it my HLT by accident because I couldn't see the water line with the all the steam coming off. After turning it off and letting it dry it's still worked perfectly! (2+ years)

It may be a touch pricey but I use it everwhere!

This probe?

I use a digital thermometer with a 7 inch steel probe, and have had it calibrated to national standards. It reads 1 deg C high.
