Planning for my second recipe, the first Cherokee IPA is in the primary, eagerly waiting to be kegged:rockin:. Wanted to go a different direction for this brew. Something a little lighter, fruity and malty, a springtime beer. Interested in definite honey notes, without actually having to use honey.

Let me know what you think...
OG - 1.048
FG - ~ 1.012
IBU - 33.3 (BU/GU = .069)
SRM - 7.7
ABV - 4.8%
2 gal boil
5 gal final batch
Fermentables:
1lbs - Honey Malt
1lbs - US Crystal 10L Malt
1lbs - Vienna Malt
3.3lbs - Extra light LME
2lbs - Light DME

Hop schedule:
.75oz - Citra 11.0 % @60 Min
1.5oz Citra 11.0 % @20 Min
.5oz Citra 11.0 % @1 Min

Yeast - Safale US-05
 
I did an all-citra pale ale last summer and really enjoyed it. You might be a bit on the sweet side with that much honey malt, but it should still be tasty. Hope it turns out well.
 
I would not recommend going over 8oz on your first 5 gallon batch with honey malt.

Especially in combination with the crystal it will likely end up quite a bit sweeter than you would want in a pale ale.

3/4 lbs - Honey Malt
1lbs - US Crystal 20L Malt
1lbs - Vienna Malt
4lbs - Extra light DME
1lbs - Light DME

Hop schedule:
1.0oz - Citra 11.0 % @60 Min
1.5oz Citra 11.0 % @20 Min
.5oz Citra 11.0 % @1 Min

Yeast - Safale US-05
