i want to know what y'all think about this recipe.

18 to 24 lbs of 2-row
1 lb carapils
1 lb crystal 40
12 oz crystal 60
4 oz roasted barley
1 lb belgian candy or brown sugar

california white labs WLP001

1 oz Amarillo as wort hits kettle (take out before boil)
1 oz chinook entire boil
1 oz centennial half hour later
1 oz columbus one hour through boil

after ten minutes

add .5 oz hops every 5 minutes.
.5 columbus
.5 centennial
.5 chinook
.5 Amarillo

wait ten minutes

then again every five minutes add
.5 columbus
.5 centennial
.5 chinook
kill flame
add .5 amarillo

in secondary dry hop 1.5 oz of cascade for 7 days.


i am shooting for a red hoppy barley wine. (India wine)


this is my first barley wine and ipa.
 
waay too much crystal malt for something meant to be hoppy. cut it down to 1lb max. ditch the roasted barley too, its out of place for either recipe.

as for the hops, why are you removing a First wort hop from the boil and that is way too focused on early hops than late hops.

an 'india wine' is basically just a young american barleywine or an IIPA.
 
If this is for 5gal then I agree with dcp, way too much crystal. You'll be lucky to hit 75% attenuation with just base malt at that gravity. If you start throwing in crystal, your attenuation will start dropping. The RB could be interesting, but I wouldn't excede the 4oz. The hop schedule looks great.
 
i altered the hop schedule to this

.5 oz amarillo as wort hits kettle (dont remove)
.5 chinook as wort boils
at one hour add .5 oz centennial
at 1.5 hr add 1 oz columbus

then every five minutes, about last half hour
.5 oz columbus
.5 oz chinook
.5 amarillo

.5 oz columbus
1oz centennial
1 oz chinook
kill boil, 1 oz amarillo

dry hop 1.5 to 2 oz of columbus for about 7 days.


i did not know that too much crystal can affect the attenuation, great to know.
i am now going to use 1/2 lb crystal 40 and 1/2 crystal 60
i may still use the roasted barley ( i will probably use some black patent) and have 2-4 oz.

what do you guys think about adding some rye to the recipe?

i recently had a rye ipa and it was really good.
 
I think rye is a fine idea. It won't hurt.

At 1lb the crystal is probably ok. But I wouldn't excede 1lb.

Black patent will add color, but basically no flavor. I think the RB will add a little character.
