I've been extract brewing for a while so I wouldn't know the purpose of them in brewing. Are they All Grain and how?

so how many would someone need for one batch of beer? Are folks making multiple mashes to mix or for different beers?

typically you would use one MLT (cooler) per batch of beer. the cooler is used to mash the grains, do quck search to read all about mashing.

i do 3 gallon AG batches and use a 5 gallon Igloo cooler to mash in.

You'd just need one.
Folks dump all their grain in there, then whatever water they need to get it roughly 150*F to activate enzymes that convert starches to sugars...then they strain off the liquid, add hops, yeast, and love, and boom...delicious beer.
