So I'm using a liquid yeast for a winter triple, and it blew over with just the s-airlock. So I put the siphon tube and line into a gallon container with water. Is this okay or is there another method to keep it from blowing over? I just hope this doesn't ruin the beer with it but I'm trying to keep things from making to much of a mess in the closet!

nah, seal up the fermenter real tight so it builds up enough pressure to coat the ceiling when it blows! Just kidding.

Yep, you did the right thing. Many times bigger beers will need the blowoff tube. You might also find smaller beers in fermenters without much headspace will need one too.
