First attempt at wine. I did 5 gallons of Yooper's Welch's recipe. I have the top off water in it. I have not added the yeast. Gravity reading was a bit above 1.150.

Should I dump some out and add more water, or split the batch and dilute?

Depends on the yeast and how you plan to pitch it... If it's wine yeast, such as a Lalvin strain, then you could just rehydrate it and pitch. You probably want to add some nutrient and energizer to the batch before pitching though... You could even make a small starter to get the yeast cranking before pitching...

For reference, I've pitched EC-1118 into musts with a higher OG and they were fine... I did rehydrate them, and feed them, and pet them, and call them George... :D
