I will need to eventually start thinking about bottling my Rochfort 10 clone. Does anyone have any experience in bottling beers that are close to 12% ABV. Do I need to re-pitch some yeast? If so...should I use the abby yeast (only tolerates about 12% ABV) or should I consider some other type of yeast that can tolerate a higher alcohol concentration. Also...not sure what to prime with....rock candy, corn sugar, etc. Thanks for the help.
