First PM....2 questions:

1) With a 6 ibs grain bill what temp should my water so that when I add the grains it will settle around 152?

2) I was planning a 60 min mash, if conversion occurs before the hour, but I leave the grains in the mash what are the consequences?

1) 166.0 F, unless your grain temp is higher than normal room temp.

2) Nothing, IMO. Unless you have iodine to test for conversion, just leave it for the hour. I do 90 min. mashes, but that's specific to the beers that I beer.

Carry on, mate. You'll be fine.

also remember most of these measurements assume no heat loss to equipment (i.e. a preheated mash tun). If the mash tun is room temp it will suck out some heat, just like the grain will.

Getting started this late in the evening, eh?

It fills my heart with joy to know that brewing is going on around the clock, somewhere. :mug:
