Feeling somewhat emboldened upon discovering that my first batch has actually turned into beer, I've decided to step things up just a notch for my second. Since everyone says that liquid yeast will help, I'm going to go that route...and I'm going to make a starter. And I'm going to steep some grains. Here's the recipe I'm going to try...it's based on the recipe from Clone Brews, with a little simplification for a Klutz like myself.
Wee MacPistols' Scotch Ale
1 lb. 55L British crystal malt
3 oz. British peat-smoked malt
2 oz. roasted barley
2 oz. Belgian aromatic malt
9 lb. light DME
½ lb. Malto-dextrin
2 oz. East Kent Goldings (bittering)
1 oz. Fuggles (flavor)
1 oz. East Kent Goldings (aroma)
½ oz. Fuggles (dry hop)
1 tsp. Irish Moss
Wyeast 1084 Irish ale yeast
1¼ cups extra-light DME (priming)
