I've gotten sick of not having clear beers on my first few all-grains, so I went all out and used irish moss at the end of the boil, used gelatin finings in the secondary and cold crashed for a few days before bottling (doing all within recommended dosages). My beer is clear as can be at this point, but will there be sufficient yeast to carbonate? I've primed with the normal amount of corn sugar.

There will be enough but it may take longer sense they may need to reproduce in the bottle with out O2 and with the alcohol. It may even take some aging to rid the ill effects of the poor bottle fermentation..

I viable yeast population can eat up priming sugar in less than a day under the right circumstances. You can chill them in the bottles rather than the carboy. You just may have slightly more sediment.
