An easy and elegant recipe using Brie cheese:

1 small wheel of Brie cheese
1 pack of premade puff pastry (around the pilsbury biscuits, etc.)

The pastry should be able to be unfolded into a flat sheet pretty easily. Allow it to thaw a bit if necessary. Place the small wheel of brie in the center of the pastry and fold it so that the cheese is completely jacketed. Trim off excess pastry. Flip the cheese over, place on a non-stick cookie sheet, and bake according to the pastry instructions; browning slightly. Can be served as an appetizer.

Pairs well with most anything, but especially Sweet Stouts, Cream Ales, and especially Melomels.:D
