Planning to purchase a pail of Ice Wine juice. Any advice?

I have heard the juice will be acidic so I will need to baby the yeast for a while. I managed to get a lemonade going recently so I will use the same process I did for that.

I have also heard that due to high sugar content, the yeast won't be able to ferment out to dry (which is fine since this is meant to be sweet anyway).

Anything else I should be aware of?
 
Fermenting ice wine is a long process at temps around 40 degrees. I think it takes anywhere from 2-4 weeks to ferment.
 
I made Icewine 1 time and I made it from a kit. If you follow the directions you'll be OK. Mine tasted GREAT!!!!!!!!!!!!! You won't want to share it.
