I used a little graph theory to make a graphical chart that makes choosing substitute hop varieties very easy.
Here is the .pdf chart and explanation.
Basically, any two hop varieties which are connected by a line are good substitutes for each other.
We use this chart in our homebrew supply store when a customer comes in with a beer recipe that we don't carry the hops for. We simply find the nearest hop which is colored green in the chart (the ones we carry) and use that as a substitute.
A little math/computer science applied to brewing. Choosing which hops to carry becomes the standard "graph coloring" problem.
