Any ideas on what temp I should pitch my wyeast 3068 for a traditional hefeweizen? I am thinking 65-70 as a default for ale yeasts... only reason I am bothering to post is I don't have experience with the strain or the style, and some of you guys do... should I do differently?

i just did one at 17 ºC (about 63 ºF) with 3068 as recommended by jamil...it turned out great. i held it there for about 10 days then bottled.

"as recommended by jamil..."

Hate to jump on a bandwagon, but following his fermentation guidelines for hefeweizen (62F) led me to produce my best hefes to date.

Happy Brewing!
