When do you check the pH of the mash? Is it before the grains are added or after or both? Thanks.
 
After the grains are added is when pH is really important.

Depending on how detailed your recipe/water/grain analysis is, checking the pH beforehand may be advantageous as well.

You may also want to check the pH during the sparge to make sure it isn't rising above your target pH.
 
I check mine when I have my mash up to temperture. It is the only
time it really counts. After a while mashing your PH will drop anyway.
It is the start of the mash that you want your ph in range.
