I have a batch of regular mead I just started on 8-27-09. I used 20lbs raw honey, 1 pack D47, and so far 3 tsp of energizer... Rest water up to just barely over 5gal.
Mead is fermenting pretty well at a bubbling rate of 5-6 per minute. Smell around the airlock smells very sweet and since I'm just starting the batch I expect that.
I added 1 tsp of energizer when I added the yeast, then I added another tsp of energizer on 8-31. Then I added one more tsp yesterday on 9-4. So on
8-27, 8-31, and again on 9-4.
I am curious if you all think this will finish off sweet or do you think it will finish off dry? I'm going for a good sweet mead with a fairly high ABV. My meads before have always finished off bone dry, but I have only used between 12-15lbs honey in the past. And have always needed to back sweeten.
