2 days ago I added metabisulfite, sorbate, and finning packets to a riesling
30 day wine kit. Confusing it with another kit after seeing all the sediment I racked it (after only 2 days) when instructions say 14 days. Have I messed This Kit up? And what should I do now. Thanks
 
The worst problem is the loss of wine in the early racking, and hopefully that wasn't much. The Kmeta, sorbate and fining ingredients should still be present in sufficient amounts. But, make sure to top up the carboy with a similar wine ASAP. You might also give it some extra time to clear beyond what's specified in the kit directions.
