Tasting Notes
solid wit, not overspiced or over sour, acid malt gives the faint hint of sour
9 lbs Wyermann organic pilsner (commercial would be fine)
5 lbs Flaked wheat
3 lbs Wyermann organic white wheat malt (again, commercial would work fine)
8 oz acid malt
1 lb rice hulls

simple step mash, easy to do as a first step mash
mash in with 4.2 gal @ 132
hold at 122 for 30 min
add 3.75 gal at 187
hold at 152 for 30 min
all 3.7 @ 210
hold at 168 for 10 min

sparge with ~170 water

-boil 15 min before hop addition-
1.25 oz saaz for 60 min
.75 oz saaz for 20 min
1/2 oz seeds of paradise for 5 min
1/4 oz chamomile tea for 5 min
1 oz coriander (indian) seed 5 min
2 oz orange peel 5 min

cool and pitch Wyeast 3944

for the orange peel the dried chunks at the LHBS will not do
I used 8 sweet (regular) oranges and 1.5 grapefruit to simulate the bitter orange

slow the boil to a simmer for the last 5 minutes as to not blow out too much of the spices aromatic qualities

truly a great beer
